As per the definition, pedantic is someone who's so obsessed with minor details that they are annoying, basically used in a negative way. But option 2 is rather the opposite where she's being praised. So shouldn't option 2 be something like, "Her meticulous nature made her an excellent proofreader."; or is it not necessary that pedantic is used only in a negative way?

i am not fully sure but the first three sentences show same type of pattern like perfect grammar, attention to detail and review focus on minor plot but the last one don't match with similar tone of annoying or irritating.
I'm not fully sure but pedantic is a negative word and I think meticulous shows a more positive side, so meticulous will be used for the sentence as it says EXCELLENT, which as you said is positive.
Please correct me if i'm wrong.

Pedantic is generally used in a negative manner, however, you can use that to convey something with overarching positive circumstances too: "Mr. Rajesh could be a pain in the ass, makes sense why he was able to get the most work done from his subordinates"
